KEMAMPUAN SARI DAUN SALAM (Syzygium polyanthum) DALAM MENEKAN KEBUSUKAN DAGING BROILER

Suatu penelitian telah dilakukan tentang Kemampuan Sari Daun Salam (Syzygium polyanthum) Dalam Menekan Kebusukan Daging Broiler di Laboratorium Ilmu dan Teknologi Pengolahan Susu. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan 3 perlakuan yaitu: P1= lama perendaman 8 jam, P2= 16 P3= 32 jam. Setiap terdapat 5 kali ulangan sehingga diperoleh 15 unit percobaan. Adapun parameter yang diukur uji ebert, H2S, postma total mikroba. Berdasarkan hasil menunjukkan bahwa sari daun salam tidak berpengaruh (P 0.05) terhadap kebusukan daging broiler. Hasil Eber 50 % sampel menujukkan tanda awal terjadinya proses kebusukan, sedangkan pada H2S lebih dari 50% mengalami serta Postma semua selanjutnya mikroba cemaran sebanyak 6.5x 107 CFU/g. dapat disimpulkan mampu menekan Kata Kunci: salam, broiler, Uji
